Jim’s recipe of the month: tuna fish pie

tuna fish pieBy Jim the Chef (honorary degree)

I am often asked where I receive the inspiration for my recipes. My usual answer is, “I don’t know, they just come to me. Sometimes in a dream, sometimes at the end of a six pack.” Great artist, like me, just have our motivations.

The inspiration for this recipe came from a television commercial. It’s the one where Charlie the Tuna is swimming above two lovely young ladies eating salad on their lunch break. Charlie is pitching pouches of flavored tuna for the salads. These ladies actually contaminate their lunch with the tuna, probably not realizing they will have stinky breath the rest of the day. No happy hour after work for them.

I decided to create a tuna recipe hopefully without the stink and one that taste good.

You will need the following ingredients:

  1. Two cans of tuna in spring water
  2. One can sweeten condensed milk
  3. One can fruit cocktail
  4. One container whipped topping
  5. Two pans of pie crust

Drain the tuna and fruit cocktail. Mix the tuna, condensed milk, fruit cocktail and whipped topping in a large bowl. Add the mixture to one of the pie crust. Remove the pie crust from the other pan and place the pie crust of top of the mixture. Preheat oven to 400 degrees and bake pie until golden brown, approximately 30 minutes. Remove pie from oven and let sit for 45 minutes to one hour. Slice the pie and place one slice on a plate to sample.

After a couple of bites, take the remaining pie and place in the nearest trash receptacle. I would then suggest ordering a pizza and brushing your teeth.
